Crafted using the traditional Kakhetian qvevri method, this wine is made from the highest quality Khikhvi grapes harvested in the Vazisubani microzone. The wine underwent an extended 7-month maceration period. It is distinguished by pronounced aromas of quince, apricot and honey. Notable for its soft, pleasant tannins and long finish.

Vinification

The Khikhvi white dry wine was crafted following European winemaking traditions to emphasize elegance, clarity, and varietal expression. The grapes were hand-harvested at optimal ripeness to retain natural acidity and aromatic complexity. After gentle pressing, the juice was fermented in temperature-controlled stainless-steel tanks, ensuring precise preservation of floral and fruity aromas.

Malolactic fermentation was intentionally avoided to maintain the wine’s lively acidity and crisp finish. After primary fermentation, the wine was left on fine lees for several months, with periodic batonnage (stirring of the lees) to enhance texture and add depth to the palate.

The aging process lasted for 5-6 months in stainless steel tanks. This process resulted in a well-balanced, expressive wine that reflects the true character of the Khikhvi grape with a clean, vibrant finish.
