Vinification

During vinification, grapes destined for this rosé were carefully selected and lightly pressed to extract only the most delicate juice, preserving vibrant fruit character and freshness. The fermentation process was carried out in temperature-controlled stainless-steel tanks, ensuring that the aromatic profile remained bright and crisp.
To achieve a refined balance of fruitiness and acidity, the wine underwent cold fermentation, locking in red berry fruits aromas. After fermentation, the wine rested on fine lees for several weeks, allowing enhanced texture and complexity through batonnage (gentle stirring of the lees).
This rosé did not undergo malolactic fermentation, maintaining a lively acidity. Aging took place over a short period, in stainless steel without overpowering the delicate freshness of the wine.
